Homemade green mint baking chips like Guittard’s

My favorite cookie flavor, mint chocolate chip, is just not a thing over here. To make things worse, mint baking chips aren’t possible to get either. Nor regular chocolate chips for that matter. So I have to start from scratch here.

It seems like Guittard’s Green Mint Baking Chips are preferred by many, featuring in a lot of recipes. I suspect they use them at the Pacific Cookie Company. Their Mint condition is what I aim at replicating eventually.

I’ve tried a couple approaches, and landed on the simplest one, combining white chocolate, peppermint extract and the ultra potent and slightly terrifying cake coloring to get that, well, mint green look. But they turn out pretty good. Now I have to work on a cookie recipe.

Note

  • Melting white chocolate is a bit different than melting regular chocolate (it’s not really chocolate). But the principle is the same, it just takes a bit longer. Be careful, though; it burns easily.
  • I prefer the microwave melting method, but you can also use a double boiler method.
  • You can either spread out the mint chip mass in a baking sheet with a spatula or use a piping bag to make proper chip shapes. I am definitely trying the latter next time.
  • This recipe is per 100 grams of chocolate. Should be pretty straight forward to double, triple or whatever amount you would like.

Ingredients

100 grams white chocolate (bar or chips)

2 drops peppermint extract (or to preferred taste), depending on brand

Strong food coloring (green and blue, or mint green)

Instructions

  1. Cut the white chocolate into pieces and add them to a glass bowl. Put them in the microwave at full effect for 20 sec. Take it out and move the bits around with a fork. Repeat for 20 sec and stir around. Then for a third time, put the bowl back in and do yet another two rounds of 20 sec (so, in total 80 sec). Now you will see that the chocolate has started to melt a bit but it will look far from done. Trust me, resist the temptation of putting it bak in, it can easily burn. Use the fork to move around the bits until they slowly melt and become more fluid. It will happen after a couple minutes.
  2. Add two-three drops of peppermint extract, or to prferred taste. I used Lore Anns.
  3. Add the food coloring, I used a mix of mainly green and a little blue.
  4. Transfer the mix to a small baking sheet lined with parchment paper and even out as good as it gets with a spatula.
  5. Let it set in the fridge, about 30-60 min. Take it out and break the sheet in preferred sized pieces. Keep in airtight box.
